Vincent Charlot is one of the most ardent practitioners of biodynamic agriculture in Champagne. The Pinot blend is fermented in neutral oak for a year before going into bottle. However, malolactic is blocked. This creates a wonderful balance of shimmering acidity with a rich, round, hefty character.
