Champagne Miniere F&R "Symbiose" Extra Brut 2014

"Symbiose" is perhaps the most emblematic wine of the Miniere style. This is a 50/50 blend of Pinot Noir and Chardonnay entirely from the 2014 harvest. Barrel-fermented and then aged for 8 years (!) in bottle before the yeast is disgorged. A intense, powerful wine, with a earthy undercurrent and notes of brioche, white chocolate, and floral red fruit. Stunning stuff. Only 36 bottles of this wine were sent from the Minieres' cellar to NY/NJ.
