Clos Cibonne “Cuvee Tradition” Cotes de Provence Rose 2021

Clos Cibonne is Provence's most iconoclastic producer of rose. In addition to growing the "forgotten" red variety Tibouren, they also aged this wine in large old barrels sous voille, which allows a veil of yeast to form on top. This broadens the texture of the wine, and produces earthier, spicier flavors than you might expect from a Provencal rose.
