An excellent example of the unique "Sous Voile" style of the Jura, this Chardonnay spends two years in barrel without topping up, which encourages a layer of yeast to develop. Nutty, salty flavors reminiscent of Fino Sherry (which shares the same method) emerge and combined with golden apple fruit. A beautiful, wild wine.
